INGREDIENTS
- 2 thick slices smoked bacon
- 1 large egg, boiled
- 2 slices of baguette, toasted
- 1 tbsp olive oil
- 6 leaf of Romain, no cut
- 1 slice of blue cheese
- 1 slice of lemon
- salt, pepper TT
- parmesan cheese to garnish
For Dressing
- 2 large egg yolks
- 2 tbsp fresh lemon juice
- 1 tsp Dijon Mustard
- 1/2 cup vegetable oil
- 1/2 cup olive oil
- 3 tbsp parmesan cheese
- 1 clove garlic
- salt, pepper TT
DIRECTIONS
Toast the baguette, slice with olive oil, place in the oven for 6 minutes until golden brown.
Arrange the bacon in a single layer on a sheet pan and back for 20 minutes, until brown.
For dressing whisk in the egg yolks, lemon juice, and mustard. Slowly whisk in the olive oil and vegetable oil until emulsified. Whisk in parmesan cheese, season to taste with salt and pepper.
Arrange the lettuce, bacon, boiled egg, and blue cheese artfully on the salad plate. Drizzle with the dressing. Sprinkle with salt and pepper. Add the fresh lemon slice, toasted baguette, and parmesan cheese. Serve in room temperature.
